Just a really quick post today to share my favourite pancake recipe. Light and fluffy American style pancakes that are really quick and easy to make. They are called ‘the one cup pancake’ as it says in the name, everything is measured in cups. If you don’t have a measuring cup then a mug will do!

For the Pancakes

  • 1 cup Self Raising flour
  • 1 cup Milk
  • 1 Egg

Put all the ingredients in a bowl and whisk together- you can season with salt if you like, I prefer to cook without salt.

Heat a frying pan to a medium heat and put a knob of butter in to grease the pan (I’ve recently become a convert to coconut oil so I opted to use this instead of butter). 

Using a ladle or spoon, pour a small amount of batter and ‘swirl’ around the pan to cover the base.

 
Once the pancakes start to bubble on top and are looking ‘dry’ on the edges they are ready to flip!! (They should look a little like the pancake above).


After cooking pancakes many times and finding I always end up eating last, I now cook them and keep them in a heatproof dish in the oven at a low heat. That way we can all eat our pancakes (hot) together. (Note the little hand trying to get the first bite!)

  
We love to stack our pancakes and top them with plenty of bacon and a good drizzle of maple syrup!

    That does sound simple, very few ingredients. Add in some fruit and you can call it healthy 🙂

      I’ve done them with natural yoghurt and fruit before but bacon and maple syrup is my weakness 🙂
